Long distance wedding

I can {nearly} count on one hand how many months it is until our big day. I have so many emotions about this, but above all I am incredibly excited to marry my best friend. It's easy to lose sight of what 'getting married' is all about, and amongst stressing about the tiny weeny details, the flowers, the ceremony order, and the place cards... it's nice to step back and to think I am marrying the man I love with my favorite people in the world, and THAT is what really matters. But trust me, it's easy to get overwhelmed by smaller details in the run up to the day.

We are getting married in England. Living in Canada, this was a big decision, and has meant we are planning the entire day from afar. Thankfully my amazing mum has stepped up and has taken on a huge role as 'wedding planner', she has been the back bone through this entire process and I DEFINITELY wouldn't have been able to do this without her help - She's a super star and it's been super fun working with her to achieve the wedding Adam and I want.

We are having a small wedding and are celebrating the fact Adam and I spent many, many years in a long distance relationship with a travel themed wedding. Suitcases, luggage tags and postcards galore! As we are getting married in a town hall, we have a blank canvas to decorate just how we want - it's pretty great!

I would love to share bits and pieces of our wedding planning as we count down to our big day.

Tacos Tuesday (...ok, Wednesday...)


veggie Mexican tacos

There is little I like more than a delicious lime induced taco. I mean who doesn't love a good taco right? You will probably notice measurements are a little vague - That's the great thing about tacos, you can kind of make it up as you go along, but you can use the below as a loose guideline! These measurements will feed 4 people three small soft tacos each.

Salsa - What you need:

•4 - 5 on the vine tomatoes
•1 lime
•Handful of cilantro (coriander)
•1 red onion
•Salt & pepper
•2 small cloves of garlic
•jalapeno {for a kick}

What you need to do:

1.Chop up the tomato into 1/2cm sized chunks
2.Chop the onion into tiny chunks
3.Chop coriander, coriander is very flavoursome so the smaller the pieces the better
4.Add all ingredients to a bowl and squeeze like over the top
5.Throw in the crushed garlic, and as much jalapeno as you can handle
6.Season with salt and pepper and mix together
7.Try some, it's a tasty treat!

Guacamole- What you need:

•2 ripe, slightly squishy advocados
•1 clove of garlic
•1 chopped tomato
•1 red onion
•Salt&pepper
•Lime juice

What you do:

1.Cut advocado in half and scoop out flesh, mash in a bowl using a fork. You can either make chunky or smooth guac, whichever is your preference.
2.Chuck in finely chopped onion, tomato and crushed garlic.
3.Mix together and season to taste with lime juice and salt & pepper.
4.I've heard a trick that if you put the avocado stone I'm the middle of the bowl it stops the advocado going brown... {Sneaky trick: What I usually do is I make a little bit more salsa, then I take a big scoop of it  and combine it with the advocado}


The Taco Shell

We like to use corn soft taco shells. This is mainly due to my boyfriends gluten allergy, but also because soft taco shells are the yummiest. You can heat them in the microwave by putting kitchen towel in between them. 3-4 tacos in the microwave take around 50 seconds. If you aren't a fan of soft taco shells or you want a healthy alternative, butter lettuce works spectacularly as a wrap.

Other bits and bobs

Chunk of lime to squeeze over finished taco, sour cream and refried beans - 1 can of refried beans will suffice, just heat them in the microwave and dollop it onto the taco shell before stuffing them full of your salsa & guacamole goodness. Kapow!

I stumbled upon something really cool today that I would love to share with you. I spent many years in a long distance relationship from London to Canada (4 years to be precise). My beau and I would always be looking for ways  to pretend we were together, even when we weren't. We had our fair share of  'date nights' which usually ended up being pretty funny as it always consisted of me eating dinner whilst Ad ate his breakfast... Anyways. We would often try and watch movies together whilst on Skype. 1...2...3...PRESS PLAY. It never quite worked out,  and we would always be out of sync.

Enter; Lets Gaze.  A super cute tool for people in long distance relationships which allows you to watch movies/TV shows at the exact same time as your loved one. It's simple, but it's oh so smart.

Rifle Paper Co: Calendars

I've been a huge Rifle Paper Co fan for the past couple of years. I seriously adore the founder -  Anna Bond, and had it not been for her honest approach to how she and her husband started Rifle, I'm not sure I would have had the courage to take the leap with Little Me Paper Co. So I owe a lot to Anna and Rifle Paper Co.

Her bold gouache paint style sets her aside from other paper goods companies, and her designs are fun, contemporary and something pretty special.

I have been on the look out for a new calendar for the big 2 0 1 5 - and when I saw Anna's offerings, I was so happy.

Travel the world wall calendar: Inspired by vintage travel posters from around the world.





Honey Bee: With gorgeous gold foil accents on every page, this sweet offering is the perfect size for your kitchen or office wall



Monarch Flip Calendar: This fancy offering is something a little bit different. It includes Monarchs from all around the world. Each month includes a pattern is inspired by the Monarchs country and ruling dates.

Little Me Paper Co


 
 
At the beginning of August I launched my paper company, Little Me Paper Co. Well, if by launch you mean opened an etsy shop, and put a couple of pictures up...then yes...I launched!

I am a self confessed stationary addict with an entire bookshelf of notebooks...it was only really a matter of time before I started my own little company.

My Etsy shop opened on August 1st, and I have been so grateful (and a little overwhelmed) for the support and love it has received so far. I am working so hard on it everyday, and I think things are moving along nicely (with the help of my lovely customers, family, and friends of course).

At the moment I specialize in custom portraits, custom notebook and greeting cards. I am in the process of expanding to wedding stationary which fills me with the most joy...ever!
